Oven Roast Beef

Ingredients:

The ingredients required for this are both simple and basic.

  1. a good sized Beef Roast of whatever type you prefer
  2. about 2 pounds of small potatoes
  3. a large bag of baby carrots
  4. a large can of Mushroom Soup
  5. some freshly sliced mushrooms
  6. several Garlic cloves or some minced Garlic to taste
  7. whichever other vegetables or spices you like to toss in

Directions and notes:

Rub down the roast with some Olive Oil and sear it quickly in an iron skillet. Place the roast in a good sized
Dutch Oven. Lay out the potatoes around the roast, sprinkle the top with the onions, garlic, carrots and whatever else you like. I usually open the Mushroom Soup and mix it with a full can of water and the sliced Mushrooms. Pour this over the roast and all of the other ingredients. I put use Cajun spices or Cayenne Pepper to taste and bake between 3 and 4 hours in an oven at 375 degrees F.
